 I had plans to bake something and make another post but I fell asleep on the couch while looking at rentals and if that happens, I think now that it's 8:30, I'm allowed to go to bed.

The combination of:
10 whole eggs
and
Beat the eggs with a third of the sugar until the volume quadruples

Is why I own some 10 litre mixing bowls. The full recipe gets kinda vast. (I have certain suspicions about Aimée's stand mixer's size, too, but never mind.)

I halved the recipe and it was ammaaaaaaaazing. I gave half away this afternoon and I'm making another tomorrow night just so I can eat it out of a pan with a fork again.

I also don't have a pan large enough to fit my cake pan for a bain marie, so I just stuck it in and I did have to bake it twice as long but it turned out so good.

I don't think anybody outside of Quebec has heard of a bain-marie (well, alchemy enthusiasts.) It takes a serious pan, to the point where even if you've got it it's awkward. Handle with delicacy and care or it will slosh.
